Chester's Chili
Serves 6-8
This stomach-pleaser is sure to warm you up on those cold Autumn nights. Chester's Chili is packed with plenty of iron, protein, Vitamin C, and the anti-oxidant Lycopene from tomatoes.
Ingredients
1 pound ground round (beef) or turkey
2 medium onions, chopped (about a cup)
1 cup chopped green pepper (one large pepper)
1 28-ounce can chopped tomatoes
1 8-ounce can tomato sauce
2 teaspoons chili powder
1/8 teaspoon cayenne pepper
1 teaspoon sea salt
1/2 teaspoon paprika
1 can kidney beans or mixed beans; open can and drain juice out
Method
In a tall sauce pot, add chopped onions, green pepper and ground beef or turkey. Heat ingredients until the meat is almost completely cooked, draining off the fat. Add the chopped tomatoes, spices, and tomato sauce. Heat to just about boiling, then turn down heat and let simmer for one hour, while stirring frequently. After one hour, turn off heat and add the beans. Let sit for 5-10 minutes. Serve hot.
